Gruyere comes from the area of Switzerland north and east of Lake Geneva.? One of the truly great cheeses of the world, this cow?s milk cheese is moister and more highly flavored than Emmentaler.? Gruyere has a smooth creamy consistency with very few small pea size holes.? This is an excellent choice for fondue, and due to its sweetness is also delicious with pears and apples.? Serve with a mature Cabernet, Red or White Burgundy.
